TradeMe Chocolate Cupcakes

I obtained this recipe from NeckRedRecipes and honestly, what initiated me to do this was the name itself. The name and what the blogger have to say about the texture and flavour of the cupcake was really good too! Plus, I have a reason to bake. It was Sian Thoe's birthday.

I halved the recipe to obtain 12 medium sized cupcakes.

Ingredient A : Butter and sugar creamed till light followed by addition of egg and vanilla.
50gm butter, softened
8 tbsp white sugar
1 egg
Slightly less that 1/2 tsp vanilla extract

Ingredient B : Dissolve baking soda in milk and set aside.
1/4 cup milk
1/2 tsp baking soda
1/4 cup boiling strong coffee (1/2 tsp coffee powder and top up with boiling water to make 1/4 cup)

Ingredient C : Sifted in a bowl and set aside
95 gm plain flour
Pinch of salt
1.5 tsp baking powder
20 gm cocoa

After the addition of vanilla and egg, add in the rest of the ingredients in no sequence and blend until smooth and lump-free.

Fill up the lined muffin tray (only half full as the batter will rise pretty high) and bake them in a preheated oven at 160°C for 15-17mins.

Serve plain or dust lightly with sifted icing sugar when cooled.... I think there is no need to reduce the sugar content in the recipe as it is just nice for me even after the chocolate topping is smeared on...

Lao Por Ping (Wife's Cake)

I made this way back when my house organized a BBQ party for some good friends. I think Florence's recipe is good and fail proof.

Egg washed and ready for baking. I didn't want to snip it with scissors. I used toasted black and white sesame seed to sprinkle on it instead. Gives it the extra crunch when biting.

After rolling it swiss roll style twice...I like the spiral pattern!

These are the fillings.

Those far rights are the pastry skin, with oil dough wrapped inside.

I followed Florence's recipe to the T and it came out perfect. This only yield 12 small bite size cakes.

Went down well when it's still warm with a cuppa tea!
