Tasty Little Butter Bun

These are taken off Agnes Chang's book, I can bake and they are absolutely beautiful. Very handy and a favourite among kids especially. These are very very buttery and addictive, you'll just keep popping one after another into your mouth.

Whether the little buns are fluffy or not depends on your recipe of basic sweet bun dough. There are various good one out there so pick one and fill them with this, what Agnes called the buttercream filling. Very simple, just butter and icing sugar chilled and stuff them in. I agree it's a little tedious but it's yummy. Loads of calories in it and I'm not prepared to pop too many into my soon-to-be-big tummy!

These makes about 4 trays of 7'' round baking tin full of little butter buns, with approximately 18-20 little buns per tray. Each little bun is weighed to 10g each before filling.

Filling for little buns: chill it in fridge or 2 hours before use

200g butter, soften and mix with 40g icing sugar

Divide your sweet bun dough into 10g portions each and shape them into rounds. Flatten and wrap up a little butter filling. Shape into rounds again and arrange them onto a greased and lined (I skipped this and generously greased them with butter). Place them about 1cm apart until the tin is full. Cover with a piece of damp cloth and leave aside to rise until all the buns have expanded and joined together to fill up the whole baking tin. Glaze with beaten egg and bake in a preheated oven at 180°C for about 20mins until they are cooked and golden brown. Remove from the oven, brush top with melted butter to give buns the shiny, glossy look. Leave to cool before removing buns from the baking tin.

I am so tired and restless now and to think that I have to wake up at 8am tomorrow to send my housemate off to the airport scares me.
